A Stranger Things–inspired alphabet gelato cake bursting with colour, creamy scoops and mischievous letter tiles — like the iconic wall, but sweeter and far less terrifying.
Ingredients
- 900g Nic Cremoso VIEW IN SHOP
- Warm water (per Nic Cremoso instructions)
- 40g Fabbri Biscotti Cookie Delipaste VIEW IN SHOP
- Joyfruit Frutti di Bosco VIEW IN SHOP
- Joytopping Cioccolato VIEW IN SHOP
- Mini beans VIEW IN SHOP
- Chocolate flavoured curls VIEW IN SHOP
Method
Prepare the Gelato Base
- Combine 900 g Nic Cremoso with the required warm water.
- Add 40 g Fabbri Biscotti Cookie Delipaste and blend until smooth.
- Pour the mixture into the batch freezer and churn according to machine instructions.
- Create the Gelato Cake
- Fill a rectangular mould with the freshly churned gelato and smooth the surface.
- Add thin layers of Joyfruit Frutti di Bosco on top, returning the mould to the blast freezer briefly between each layer so they set properly.
- REMOVE CAKE FROM THE MOULD HERE
- Add Alphabet Lights Decoration
- Fill a piping bag with Joytopping Cioccolato.
- Pipe the Stranger Things alphabet string lights pattern across the top of the cake.
- Place Smarties or mini beans onto the piped lines as colourful lights.
- Return to the blast freezer until fully set.
- Finish the Cake •Once frozen, remove the cake from the blast freezer.
- Cover the sides with Nic chocolate shavings.
Serve or store in the display freezer.
